Traditional Corned Silverside with Mustard Sauce
Serves: 4-6 | Prep Time: 10 mins | Cook Time: 3 hours
Using: Fresh or Corned Silverside (1kg)
Ingredients:
- 1kg corned silverside
- 2 bay leaves
- 6 black peppercorns
- 1 onion, quartered
- 3 carrots, peeled and chopped
- 2 tbsp vinegar
- 2 tbsp brown sugar
Mustard Sauce:
- 2 tbsp butter
- 2 tbsp plain flour
- 250ml milk
- 2 tbsp Dijon mustard
Method:
- Place corned silverside in a large pot. Cover with water, add bay leaves, peppercorns, onion, carrots, vinegar, and sugar. Bring to a boil.
- Reduce heat to low and simmer for 2.5 hours.
- For the mustard sauce, melt butter in a pan, whisk in flour, then gradually add milk, stirring until thickened. Stir in mustard.
- Slice the silverside and serve with mustard sauce, potatoes, and cabbage.
