Traditional Corned Silverside with Mustard Sauce

Serves: 4-6 | Prep Time: 10 mins | Cook Time: 3 hours

Using: Fresh or Corned Silverside (1kg)

Ingredients:

  • 1kg corned silverside
  • 2 bay leaves
  • 6 black peppercorns
  • 1 onion, quartered
  • 3 carrots, peeled and chopped
  • 2 tbsp vinegar
  • 2 tbsp brown sugar

Mustard Sauce:

  • 2 tbsp butter
  • 2 tbsp plain flour
  • 250ml milk
  • 2 tbsp Dijon mustard

Method:

  1. Place corned silverside in a large pot. Cover with water, add bay leaves, peppercorns, onion, carrots, vinegar, and sugar. Bring to a boil.
  2. Reduce heat to low and simmer for 2.5 hours.
  3. For the mustard sauce, melt butter in a pan, whisk in flour, then gradually add milk, stirring until thickened. Stir in mustard.
  4. Slice the silverside and serve with mustard sauce, potatoes, and cabbage.
