Hearty Beef and Vegetable Stew
Serves: 4-6 | Prep Time: 15 mins | Cook Time: 2.5 hours
Using: Diced Beef (1kg)
Ingredients:
- 1kg diced beef
- 2 tbsp olive oil
- 1 onion, diced
- 2 carrots, chopped
- 2 potatoes, chopped
- 2 garlic cloves, minced
- 1 tbsp tomato paste
- 750ml beef stock
- 2 tbsp Worcestershire sauce
- 1 tsp thyme
- 1 tsp rosemary
- Salt and black pepper to taste
Method:
- Heat olive oil in a large pot. Brown the beef in batches, then remove.
- Sauté onion, carrots, and garlic until softened. Stir in tomato paste, then add beef back in.
- Pour in beef stock, Worcestershire sauce, thyme, and rosemary. Season with salt and pepper.
- Simmer for 2 hours until beef is tender. Serve hot with crusty bread.
