Hearty Beef and Vegetable Stew

Serves: 4-6 | Prep Time: 15 mins | Cook Time: 2.5 hours

Using: Diced Beef (1kg)

Ingredients:

  • 1kg diced beef
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 potatoes, chopped
  • 2 garlic cloves, minced
  • 1 tbsp tomato paste
  • 750ml beef stock
  • 2 tbsp Worcestershire sauce
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and black pepper to taste

Method:

  1. Heat olive oil in a large pot. Brown the beef in batches, then remove.
  2. Sauté onion, carrots, and garlic until softened. Stir in tomato paste, then add beef back in.
  3. Pour in beef stock, Worcestershire sauce, thyme, and rosemary. Season with salt and pepper.
  4. Simmer for 2 hours until beef is tender. Serve hot with crusty bread.
